By using proprietary computer controlled grating machinery, our fine quality finished product retains its natural qualities, such as full moisture and butterfat, without the use of any preservatives and additives or the addition of any dairy by-products or drying as commonly practiced in the industry. This process further enables us to produce grated cheeses affordability.
Fine shredding of hard cheeses is no longer necessary to avoid damaging of the product from heat. Our technology allows true grating; we will break down full wheels of imported Parmesan, Pecorino Romano and Asiago in a fine grated form, as well as providing custom blends. Semi-hard Cheeses such as Sharp Cheddar, Gruyere and Swiss are shredded and/or blended to order.
